Tea Treat – Earl Grey Scones

Time for Tea Please?

When being in lockdown it’s important to,fill your time with things you love doing or haven’t had a chance to do in a while and for me that’s baking. Although I’m still working I’ve found extra time in the day to fill with things I’ve not done in a while.

So today I’m back baking scones. For today’s ones I’m keeping with the the tea theme and baking some Earl Grey flavour ones.

The Ingredients

1lb Self Raising Flour
4oz Butter
4oz Sugar
1/2 tsp Baking Powder
Milk
3 Earl Grey Tea Bags
1 egg (optional)
Round cutter

Method

1. Brew half a mug of tea using all 3 tea bags and steep for 5/10 mins and then leave to cool.

2. Preheat oven to 180 degrees, Weigh out the flour , sugar , butter and baking powder and rub together to form bread crumbs.

3. Alternating the tea and the milk till a damp dough is formed.

4. Form in to a round dough , flatten the dough by hand to the height of your cutter. (I choose to flatten by hand instead of rolling it out to keep as much air in the dough).

5. Cut out as many rounds as you can and place on to a greased/lined baking tray. Re roll and repeat stage 4 & 5 again till the dough is used.

6. Glaze the scones with an egg wash or milk wash .

7. Bake for aprox 12-15 mins till golden brown or till flicking the bottom of your scones sound hollowish.

8. Cool and then serve.

I’m choosing to serve mine with lemon and lime curd and some sweetened cream cheese. Delicious .

Aldi Infusions

Time for Tea Please?
With the festiviTEAs in full swing sometimes a cup of tea is all you need, for a minute of calm, as an alcohol alternative or just because!

Today in Aldi I spotted there Aldi infusions tea range which they on,y,bring out at this time of year. Two in particular caught my eye the raspberry Prosecco and winter spice. Perfect for Christmas and New Year celebrations.
